Vegan Breakfast Tacos



These vegan breakfast tacos are filled with savory potatoes, black beans, and flavorful spices. They're perfect for a quick and nutritious breakfast that's both vegan and gluten-free.

Ingredients:

  • 1 cup of diced potatoes
  • 1 cup of diced bell peppers
  • 1 cup of diced onions
  • 1 cup of black beans
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 avocado, sliced
  • Salsa, for serving
  • Fresh cilantro, for garnish

Instructions:

In a skillet, saut the diced potatoes, bell peppers, and onions until they are tender

Add the black beans, ground cumin, chili powder, salt, and pepper to the skillet

Cook until heated through

Warm the corn tortillas on a separate skillet or in the microwave

Spoon the potato and black bean mixture onto each tortilla

Top with avocado slices, salsa, and fresh cilantro
