Smoky Red Bean Soup



A hearty and flavorful soup with a smoky twist, perfect for cold days. The slow cooker method allows the beans to absorb all the rich flavors, resulting in a satisfying meal.

Ingredients:

  • 1 lb dried red beans
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Optional: smoked sausage, sliced

Instructions:

Rinse the red beans and soak them overnight in water

In the morning, drain and rinse the beans, then add them to the slow cooker

Add chopped onion, minced garlic, diced carrots, diced celery, diced tomatoes, vegetable broth, smoked paprika, cumin, chili powder, salt, and pepper to the slow cooker

If using, add sliced smoked sausage

Stir everything together, cover, and cook on low for 8 hours or on high for 4-5 hours, or until beans are tender

Once cooked, taste and adjust seasoning if needed

Serve hot, optionally garnished with chopped parsley or sour cream
