Ingredients:
- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 red onion, thinly sliced
- 1 bell pepper, thinly sliced
- Pita bread, for serving
- Tzatziki sauce, for serving
- Fresh parsley, for garnish
Instructions:
Preheat oven to 425F 220C
In a small bowl, mix together olive oil, lemon juice, minced garlic, ground cumin, paprika, turmeric, cinnamon, cayenne pepper, salt, and pepper
Place chicken thighs in a large bowl and pour the marinade over them, making sure they are well coated
Let marinate for at least 30 minutes
On a sheet pan, arrange the marinated chicken thighs, sliced red onion, and bell pepper in a single layer
Roast in the preheated oven for 20-25 minutes, or until chicken is cooked through and vegetables are tender
Remove from oven and let rest for a few minutes
Serve the chicken shawarma with warm pita bread, tzatziki sauce, and garnish with fresh parsley
