Sheet Pan Chicken Shawarma



Chicken Shawarma on a Sheet Pan is a tasty and simple dish that brings the tastes of the Middle East to your dinner table. Spices are mixed together to make tender chicken thighs. The thighs are then roasted with onions and bell peppers until they are golden and juicy. This dish tastes great with warm pita bread and creamy tzatziki sauce.

Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 red onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • Pita bread, for serving
  • Tzatziki sauce, for serving
  • Fresh parsley, for garnish

Instructions:

Preheat oven to 425F 220C

In a small bowl, mix together olive oil, lemon juice, minced garlic, ground cumin, paprika, turmeric, cinnamon, cayenne pepper, salt, and pepper

Place chicken thighs in a large bowl and pour the marinade over them, making sure they are well coated

Let marinate for at least 30 minutes

On a sheet pan, arrange the marinated chicken thighs, sliced red onion, and bell pepper in a single layer

Roast in the preheated oven for 20-25 minutes, or until chicken is cooked through and vegetables are tender

Remove from oven and let rest for a few minutes

Serve the chicken shawarma with warm pita bread, tzatziki sauce, and garnish with fresh parsley
