This Vegan Chickpea Salad is a refreshing and nutritious dish packed with protein and fresh vegetables. It's perfect for a quick and healthy meal.
Ingredients:
- 2 cans of chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- Juice of 2 lemons
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Put the chickpeas, red bell pepper, cucumber, red onion, cherry tomatoes, parsley, and mint leaves in a large bowl
Mix olive oil and lemon juice in a small bowl with a whisk
Add pepper and salt to taste
Add the dressing to the salad and mix it all together
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
