Ingredients:
- 1 cup cooked quinoa
- 1 can 15 oz black beans, drained and rinsed
- 1 ripe avocado, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 4 large whole wheat or spinach tortillas
Instructions:
Put the black beans and cooked quinoa in a large bowl
Break up the feta cheese, add the avocado slices, cilantro, and red onion dices to the bowl
Mix the olive oil, ground cumin, salt, and pepper in a small bowl with a whisk
Add the dressing to the quinoa mixture and mix it all together, making sure that everything is covered evenly
Place the tortillas on the table and spread the quinoa mixture out on each one
The tortilla can be made into a wrap by folding the sides in and then rolling it up tight
You can eat it right away or wrap it up in foil to take with you
