Ingredients:
- 4 potatoes, thinly sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish optional
Instructions:
In a skillet, melt butter over medium heat
Stir in flour and cook for 1-2 minutes until lightly golden
Gradually whisk in milk until smooth and thickened
Layer half of the sliced potatoes in the skillet, season with salt and pepper
Sprinkle half of the shredded cheese over the potatoes
Repeat with the remaining potatoes and cheese
Cover and cook on low heat for about 20-25 minutes or until potatoes are tender and cheese is melted
Garnish with chopped parsley if desired before serving
