Ingredients:
- 1 and 1/2 cups 190g all-purpose flour
- 2 teaspoons chai spice mix cinnamon, cardamom, ginger, cloves, and black pepper
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup 115g unsalted butter, softened
- 1 cup 200g granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup 120ml whole milk
- 1/2 cup 120ml brewed chai tea, cooled
- 1/4 cup 60ml strong brewed coffee, cooled
Instructions:
Preheat your oven to 350F 177C
Line a muffin pan with cupcake liners
In a medium mixing bowl, whisk together the flour, chai spice mix, baking powder, baking soda, and salt
Set aside
In another mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Alternate adding the dry ingredients and the milk in three parts, starting and ending with the dry ingredients
Mix until just combined
Fold in the brewed chai tea and brewed coffee until the batter is smooth
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely
Once cooled, you can frost them with your favorite chai-flavored frosting or enjoy them plain
Sprinkle with a dash of chai spice mix for extra flavor if desired
