Enjoy this Zero Point Vegetable Soup that is good for you if you are on Weight Watchers! This soup is great for a light and filling meal because it is made with a lot of different colored vegetables and tasty seasonings. It also has no points, which makes it a great choice for people on the Weight Watchers program.
Ingredients:
- 6 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can 14
- 5 oz diced tomatoes
- 2 cups chopped spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Set vegetable broth on medium heat in a large pot
Peel and slice the carrots and celery, then dice the bell pepper and zucchini
Finally, chop the green beans and add the diced tomatoes with their juices to the pot
Put in the Italian seasoning and slowly heat the soup up
For about 15 to 20 minutes, or until the vegetables are soft, let the soup cook
Add the chopped spinach and cook for another two to three minutes, until the spinach is soft
Add pepper and salt to taste
Serve the Zero Point Vegetable Soup hot with fresh parsley that has been chopped on top
